A GROCER OF A SPECIAL KIND.
Abstract: With a phenomenological touch and attention paid to details, this philosophical text explores some of the conditions sine qua non of the mixtures that lay under the preparation of many star recipes of the Yucatecan cuisine. Any cook looking for recipes will be disappointed though, as this back scene of them offers none. The research has been conducted by a close observation of the gestures required in order to obtain a mixture or an extraction proper. Dialogue through questions has been conducted intuitively and experiences have been made, together with a close observation. The result that is a clear definition of the nature of the grocer’s specific activity is partially presented as an interview in order to transmit the truly warm atmosphere that has been created between the grocer and the academic who has conducted the research during more than 2 years.
